Ingredients :
- Steak about 1cm thick (I used Carrara wagyu ribeye, but any tender steak will work)
- 4 tbsp flour
- 1 tbsp baking powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 200ml milk (50ml for the eggs, 150ml for the gravy)
- Beef tallow for frying
Method:
1. Start by mixing the flour, baking powder, garlic powder, onion powder, and smoked paprika with a pinch of salt and 10-12 grinds of the pepper grinder.
2. Whisk together the two eggs and 50ml of milk.
3. Place your steak into the flour mixture and shake off any excess.
4. Take your dusted steak and place it into the egg mixture and then back into the flour mixture.
5. In a skillet, heat the beef tallow until it reaches about 180°C.
6. Cook the steak for 3-5 minutes on each side or until golden brown.
7. Remove the steak from the pan and put it onto a wire rack to drain.
8. Remove all the oil apart from 3 tbsp from the skillet and add 3 tbsp of flour to it.
9. Whisk this mixture until all the flour is absorbed by the fat.
10. Now whisk in the 150ml cold milk until smooth.
11. Cook for 5 minutes and serve over the fried steak.
